Here’s a flavorful and hearty Hatch Green Chile Stew with Ground Beef recipe — a perfect comfort dish with a New Mexican twist.

🍽️ Serves: 4–6


🧂 Ingredients:

  • 1 lb ground beef

  • 1 medium onion, chopped

  • 2 cloves garlic, minced

  • 2 cups roasted Hatch green chile, chopped (mild, medium, or hot depending on your preference)

  • 3 medium potatoes, peeled and diced

  • 1 can (14.5 oz) diced tomatoes (optional)

  • 4 cups beef broth (or water with bouillon)

  • 1 tsp ground cumin

  • 1/2 tsp dried oregano

  • Salt and pepper, to taste

  • 1 tbsp oil (optional if beef is lean)

  • Fresh cilantro, for garnish (optional)


🔪 Instructions:

  1. Brown the Beef
    In a large pot or Dutch oven over medium heat, cook the ground beef until browned. Drain excess fat if necessary.

  2. Sauté Aromatics
    Add chopped onion and garlic to the pot. Sauté until the onions are soft and translucent, about 5 minutes.

  3. Add Spices and Chiles
    Stir in cumin and oregano. Then add the chopped Hatch green chile and cook for 2–3 minutes to blend flavors.

  4. Add Liquids and Potatoes
    Pour in beef broth and add the diced potatoes and optional diced tomatoes. Bring to a boil, then reduce heat to a simmer.

  5. Simmer the Stew
    Cover and cook for 30–35 minutes, or until the potatoes are fork-tender. Stir occasionally and adjust salt and pepper to taste.

  6. Garnish & Serve
    Serve hot, optionally garnished with chopped fresh cilantro or a sprinkle of cheese. Great with tortillas or crusty bread.


🔄 Variations:

  • Spicy version: Add a diced jalapeño or crushed red pepper flakes.

  • Thickened stew: Mash a few of the cooked potatoes into the broth before serving.

  • With beans: Add a drained can of pinto or black beans for added protein and fiber.
