Hamburger Potato Casserole

Here’s a comforting, hearty recipe for Hamburger Potato Casserole — simple ingredients, big flavor, and perfect for feeding a family or meal prepping for the week!


🥘 Hamburger Potato Casserole

🍽️ Ingredients:

  • 1 lb ground beef

  • 1 small onion, diced

  • 3–4 cups thinly sliced potatoes (about 3–4 medium Russets or Yukon Gold)

  • 1 can (10.5 oz) cream of mushroom soup (or cream of cheddar or celery)

  • 1/2 cup milk

  • 1 ½ cups shredded cheddar cheese

  • 1 teaspoon garlic powder

  • 1/2 teaspoon paprika

  • Salt & pepper to taste

  • Optional: chopped parsley or green onion for garnish


🔥 Instructions:

1. Preheat & Prep:

  • Preheat oven to 375°F (190°C).

  • Grease a 9×13-inch baking dish or similar size.

2. Brown the Beef:

  • In a skillet over medium heat, cook ground beef and onion until browned.

  • Drain excess fat.

  • Season with garlic powder, paprika, salt, and pepper.

3. Mix the Sauce:

  • In a bowl, whisk together cream of mushroom soup and milk until smooth.

4. Layer the Casserole:

  • Arrange half of the sliced potatoes on the bottom of the dish.

  • Top with half of the cooked beef.

  • Pour half of the soup mixture over.

  • Sprinkle a bit of cheese.

  • Repeat layers with remaining potatoes, beef, soup, and cheese.

5. Bake Covered:

  • Cover with foil and bake for 60 minutes.

6. Bake Uncovered:

  • Remove foil and bake for an additional 15–20 minutes, until the top is golden and potatoes are fork-tender.

7. Rest & Serve:

  • Let rest for 5–10 minutes before slicing.

  • Garnish with chopped parsley or green onions if desired.


🧀 Variations:

  • Add sliced mushrooms, corn, or green beans for extra veggies.

  • Swap beef for ground turkey or Italian sausage.

  • Use cream of cheddar soup for an ultra-cheesy version.
