Ingredients:

For the Salad:

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil (for the chicken)
  • Salt and pepper, to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1 tablespoon fresh lemon juice (for the chicken)
  • 4 cups mixed greens (like arugula, spinach, or romaine)
  • 1 ripe avocado, sliced
  • 1/2 cup fresh mozzarella balls (or shredded mozzarella)
  • 1/4 red onion, thinly sliced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup cucumber, thinly sliced
  • Fresh basil leaves (optional, for garnish)

For the Dressing:

  • 3 tablespoons olive oil
  • 1 tablespoon balsamic vinegar (or lemon juice)
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon honey (optional, for sweetness)
  • Salt and pepper, to taste

Directions:

  1. Prepare the Chicken:
    • Preheat your grill or a grill pan to medium-high heat.
    • Drizzle the chicken breasts with olive oil and season with salt, pepper, garlic powder, oregano, and a squeeze of fresh lemon juice.
    • Grill the chicken for about 6-7 minutes per side, or until fully cooked (internal temperature should reach 165°F/75°C). Once cooked, remove from the grill and let the chicken rest for a few minutes before slicing it thinly.
  2. Prepare the Dressing:
    • In a small bowl, whisk together the olive oil, balsamic vinegar (or lemon juice), Dijon mustard, honey (if using), salt, and pepper. Taste and adjust seasoning as needed.
  3. Assemble the Salad:
    • In a large bowl or on individual plates, layer the mixed greens, sliced avocado, mozzarella, red onion, cherry tomatoes, and cucumber.
    • Add the sliced grilled chicken on top of the salad.
  4. Drizzle with Dressing:
    • Drizzle the prepared dressing over the salad. Toss gently to combine, making sure everything is coated with the dressing.
  5. Garnish and Serve:
    • Garnish with fresh basil leaves, if desired, and serve immediately.

Tips:

  • Add-ins: You can add more vegetables like bell peppers, olives, or even roasted beets for added flavor and color.
  • Cheese options: If you don’t have fresh mozzarella, you can use crumbled feta or goat cheese for a different twist.
