🍗 Grilled Chicken Bites with Creamy Garlic Sauce

Ingredients:

For the Chicken Bites:

  • 1½ lbs boneless, skinless chicken breasts or thighs, cut into bite-sized pieces

  • 2 tablespoons olive oil

  • 1 teaspoon garlic powder

  • 1 teaspoon paprika

  • ½ teaspoon salt

  • ½ teaspoon black pepper

  • ½ teaspoon dried thyme or Italian seasoning (optional)

  • Juice of ½ lemon (optional for brightness)

For the Creamy Garlic Sauce:

  • 2 tablespoons butter

  • 4 cloves garlic, minced (or 1½ tsp garlic paste)

  • 1 tablespoon all-purpose flour (or gluten-free flour)

  • 1 cup heavy cream (or half-and-half)

  • ¼ cup grated Parmesan cheese

  • Salt and pepper, to taste

  • Optional: fresh parsley or chives for garnish


🔥 Instructions:

1. Marinate & Grill the Chicken:

  • In a bowl, toss chicken pieces with olive oil, garlic powder, paprika, salt, pepper, and thyme.

  • Let marinate for at least 15–30 minutes (or up to a few hours in the fridge).

  • Grill chicken over medium-high heat on a grill or grill pan, turning occasionally until cooked through and lightly charred (about 8–10 minutes total).

  • Transfer to a plate and rest while you make the sauce.

2. Make the Creamy Garlic Sauce:

  • In a small saucepan, melt butter over medium heat.

  • Add minced garlic and cook until fragrant (about 1 minute).

  • Stir in flour and cook for 30 seconds to form a roux.

  • Slowly whisk in cream and bring to a simmer.

  • Stir in Parmesan and simmer for 2–3 minutes, until thickened slightly.

  • Season with salt and pepper to taste.

3. Serve:

  • Drizzle sauce over the grilled chicken bites or serve it on the side for dipping.

  • Garnish with fresh herbs if desired.
