GREEN BEANS SALAD

🥗 Green Bean Salad

✅ Ingredients:

  • 1 lb (450 g) fresh green beans, trimmed

  • ¼ red onion, very thinly sliced

  • 1–2 tbsp red wine vinegar (or lemon juice)

  • 2–3 tbsp olive oil

  • 1 tsp Dijon mustard

  • 1 small garlic clove, minced

  • Salt & freshly ground black pepper, to taste

  • Optional add-ins:

    • ¼ cup toasted almonds, walnuts, or pine nuts

    • ¼ cup feta or goat cheese

    • 1 cup halved cherry tomatoes

    • 1 tbsp fresh herbs (parsley, dill, or basil)


👩‍🍳 Instructions:

  1. Blanch the green beans
    Bring a large pot of salted water to a boil. Add green beans and cook for 2–3 minutes, until bright green and tender-crisp.
    Immediately drain and plunge into ice water to stop cooking. Drain and pat dry.

  2. Make the dressing
    In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, minced garlic, salt, and pepper.

  3. Assemble the salad
    In a large bowl, toss green beans with red onion and any optional ingredients (like tomatoes or nuts). Pour dressing over and toss gently to coat.

  4. Chill or serve
    Let sit for at least 15–30 minutes for flavors to develop. Serve cold or at room temperature.

  • Make it creamy: Add a spoonful of Greek yogurt to the dressing.

  • Add protein: Toss in chickpeas or chopped hard-boiled eggs.

  • Make ahead: Great made a few hours or even a day in advance.
