🥗 Green Bean Salad
✅ Ingredients:

1 lb (450 g) fresh green beans, trimmed

¼ red onion, very thinly sliced

1–2 tbsp red wine vinegar (or lemon juice)

2–3 tbsp olive oil
-
1 tsp Dijon mustard
-
1 small garlic clove, minced
-
Salt & freshly ground black pepper, to taste

Optional add-ins:
-
¼ cup toasted almonds, walnuts, or pine nuts
-
¼ cup feta or goat cheese
-
1 cup halved cherry tomatoes
-
1 tbsp fresh herbs (parsley, dill, or basil)

👩🍳 Instructions:

Blanch the green beans
Bring a large pot of salted water to a boil. Add green beans and cook for 2–3 minutes, until bright green and tender-crisp.
Immediately drain and plunge into ice water to stop cooking. Drain and pat dry. -
Make the dressing
In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, minced garlic, salt, and pepper. -
Assemble the salad
In a large bowl, toss green beans with red onion and any optional ingredients (like tomatoes or nuts). Pour dressing over and toss gently to coat. -
Chill or serve
Let sit for at least 15–30 minutes for flavors to develop. Serve cold or at room temperature.
