Here’s a simple and delicious Greek Cucumber and Tomato Salad recipe that highlights fresh ingredients and classic Mediterranean flavors:


🥗 Greek Cucumber and Tomato Salad

Ingredients:

  • 2 cups cherry tomatoes, halved (or 2 large ripe tomatoes, chopped)

  • 1 large cucumber, sliced (or peeled and diced if preferred)

  • 1/2 red onion, thinly sliced

  • 1/2 cup Kalamata olives, pitted

  • 1/2 cup feta cheese, crumbled or in small cubes

  • 2 tablespoons extra virgin olive oil

  • 1 tablespoon red wine vinegar or fresh lemon juice

  • 1 teaspoon dried oregano

  • Salt and freshly ground black pepper, to taste

  • Optional: fresh parsley or mint for garnish


Instructions:

  1. Prepare the vegetables: In a large bowl, combine the cherry tomatoes, cucumber, and red onion.

  2. Add olives and feta: Gently mix in the Kalamata olives and feta cheese.

  3. Make the dressing: In a small bowl, whisk together the olive oil, red wine vinegar (or lemon juice), oregano, salt, and pepper.

  4. Toss the salad: Pour the dressing over the salad and toss everything gently to combine.

  5. Serve: Garnish with fresh parsley or mint if desired. Serve immediately, or chill for 10–15 minutes for the flavors to meld.

  • Use heirloom tomatoes for a colorful twist.
