Ingredients:

For the peaches:

  • 6–8 fresh ripe peaches, peeled and sliced (or 2 cans (15 oz each) sliced peaches, drained slightly)

  • 1/2 cup granulated sugar

  • 1/4 cup brown sugar

  • 1 tsp cinnamon

  • 1/4 tsp nutmeg (optional)

  • 1 tsp lemon juice

  • 1 tsp vanilla extract

  • 1 tbsp cornstarch (only if using fresh peaches)

For the batter crust:

  • 1/2 cup unsalted butter (1 stick), melted

  • 1 cup all-purpose flour

  • 1 cup granulated sugar

  • 1 tbsp baking powder

  • Pinch of salt

  • 3/4 cup milk (whole or 2%)


Instructions:

  1. Preheat oven to 375°F (190°C).

  2. Prepare the peach filling:

    • In a saucepan, combine peaches, sugars, cinnamon, nutmeg, lemon juice, vanilla, and cornstarch (if using fresh peaches).

    • Simmer over medium heat for 5–7 minutes, until bubbly and slightly thickened.
      (If using canned peaches, just mix and warm gently — don’t overcook.)

  3. Make the batter:

    • In a medium bowl, whisk together flour, sugar, baking powder, salt, and milk until smooth.

  4. Assemble:

    • Pour melted butter into the bottom of a 9×13-inch baking dish.

    • Pour the batter over the butter — do not stir.

    • Spoon the warm peach mixture evenly over the batter — again, do not stir. The batter will rise up around the fruit as it bakes.

  5. Bake:

    • Bake for 40–45 minutes, or until the top is golden brown and set. The edges should be slightly crisp.

  6. Cool slightly & serve warm:

    • Best enjoyed with vanilla ice cream or a dollop of whipped cream.
