🥩 Garlic Steak & Potato Foil Packets

⭐ Ingredients (Makes 4 Packets):

  • 1½ lbs (680 g) sirloin steak or ribeye, cut into 1½-inch cubes

  • 1 lb (450 g) baby potatoes, quartered

  • 3 tbsp olive oil or melted butter

  • 4 cloves garlic, minced

  • 1 tsp salt

  • ½ tsp black pepper

  • 1 tsp dried rosemary (or thyme/Italian seasoning)

  • 1 tsp paprika (optional, for color and flavor)

  • Fresh parsley, for garnish

  • Heavy-duty foil (or double-layer regular foil)

🔪 Instructions

1. Preheat

  • Grill to medium-high heat (about 425°F / 220°C)

  • Oven to 425°F (220°C)

2. Prep Ingredients

  • In a large mixing bowl, combine steak cubes and potatoes.

  • Add olive oil, minced garlic, herbs, paprika, salt, and pepper.

  • Toss everything together until well coated.

3. Assemble Foil Packets

  • Lay out 4 large sheets of foil (about 12×18 inches each).

  • Divide the steak and potato mixture evenly between them.

  • Fold up the long sides of each foil piece, then fold down tightly to seal. Fold in the ends to create a secure packet.

4. Cook

Grill:

  • Place packets on the grill grates, seam-side up.

  • Cook for 12–15 minutes, flipping halfway through, until steak is desired doneness and potatoes are tender.

Oven:

  • Place packets on a baking sheet.

  • Bake for 20–25 minutes, without flipping.

5. Serve

  • Carefully open packets (watch for steam!).

  • Garnish with fresh parsley or a squeeze of lemon juice for brightness.

  • Optional: Sprinkle with Parmesan or add a dollop of garlic butter for extra richness.

✅ Tips & Variations:

  • Want more veggies? Add bell peppers, mushrooms, or onions.

  • Low-carb version: Swap potatoes for cauliflower or radishes.

  • Cheesy version: Add shredded mozzarella or cheddar during the last few minutes.

  • Meal prep: Assemble ahead and refrigerate up to 24 hours before cooking.
