Here’s a quick, flavorful recipe for Garlic Shrimp and Vegetable Sauté — healthy, colorful, and ready in under 30 minutes!


🍤 Garlic Shrimp and Vegetable Sauté

🧾 Ingredients:

For the Shrimp:

  • 1 lb large shrimp, peeled and deveined

  • 3–4 cloves garlic, minced

  • 2 tbsp olive oil

  • Salt and pepper to taste

  • ½ tsp red pepper flakes (optional)

Vegetables (choose your mix, about 4 cups total):

  • 1 bell pepper, sliced

  • 1 zucchini, sliced

  • 1 cup broccoli florets

  • 1 cup snap peas or green beans

  • ½ red onion, sliced

  • 1 tbsp olive oil (for sautéing veggies)

Optional Add-Ins:

  • Juice of ½ lemon

  • 2 tsp soy sauce or balsamic vinegar

  • Fresh herbs (parsley, basil, or cilantro)


🔪 Instructions:

1. Prep the Shrimp

  • Pat shrimp dry and season with salt, pepper, and red pepper flakes.

  • Set aside while prepping vegetables.

2. Sauté the Vegetables

  • Heat 1 tbsp olive oil in a large skillet over medium-high heat.

  • Add harder vegetables first (like broccoli and carrots), sauté for 3–4 minutes.

  • Add remaining veggies and cook for another 3–4 minutes until just tender.

  • Remove from skillet and set aside.

3. Cook the Shrimp

  • In the same skillet, heat 2 tbsp olive oil over medium heat.

  • Add minced garlic, cook 30 seconds until fragrant.

  • Add shrimp and sauté 2–3 minutes per side, until pink and opaque.

4. Combine and Finish

  • Return vegetables to the skillet with shrimp.

  • Toss together and cook 1–2 more minutes to heat through.

  • Add a splash of lemon juice or soy sauce if desired.

5. Serve

  • Great over rice, quinoa, pasta, or on its own for a low-carb option.
