Yes! Garlic Parmesan Chicken Meatloaf is a lighter, flavor-packed twist on the classic beef version. Think juicy ground chicken, savory garlic, and nutty Parmesan all baked into a comforting loaf — perfect for weeknight dinners or meal prep.


🧄🧀 Garlic Parmesan Chicken Meatloaf

Ingredients:

  • 1½ lbs (about 680g) ground chicken

  • ¾ cup breadcrumbs (plain or Italian-style)

  • ½ cup grated Parmesan cheese

  • 2 cloves garlic, minced

  • 1 egg

  • ¼ cup milk

  • 2 tbsp chopped parsley (or 1 tsp dried)

  • 1 tsp onion powder

  • ¾ tsp salt

  • ½ tsp black pepper

  • Optional: ¼ tsp red pepper flakes for a little kick

  • Topping: 2 tbsp melted butter mixed with 2 tbsp Parmesan and 1 minced garlic clove


🔥 Instructions:

  1. Preheat Oven:

    • Preheat to 375°F (190°C).

    • Lightly grease a loaf pan or line a baking sheet with parchment.

  2. Mix Ingredients:

    • In a large bowl, combine ground chicken, breadcrumbs, Parmesan, garlic, egg, milk, parsley, onion powder, salt, and pepper.

    • Mix gently until just combined (don’t overwork it or it’ll be dense).

  3. Shape the Loaf:

    • Transfer mixture to loaf pan or shape it into a loaf on the baking sheet.

  4. Bake:

    • Bake for 45–55 minutes, or until internal temp reaches 165°F (74°C).

    • In the last 10 minutes, brush with the garlic butter topping and let it finish baking uncovered for a golden, flavorful crust.

  5. Rest & Serve:

    • Let rest for 5–10 minutes before slicing.

    • Sprinkle with extra Parmesan or parsley if you like.

  • Pair with mashed potatoes, roasted veggies, or a simple green salad.

  • Leftovers make amazing meatloaf sandwiches.


📝 Tips:

  • Want it cheesier? Mix in shredded mozzarella or fontina.
