GARLIC & LEMON CHICKEN WITH RED POTATOES & GREEN BEANS

Here’s a delicious and easy recipe for Garlic & Lemon Chicken with Red Potatoes & Green Beans, all cooked on one sheet pan or in a single dish—perfect for a balanced, flavorful dinner with minimal cleanup!


🍋 Garlic & Lemon Chicken with Red Potatoes & Green Beans

🕒 Prep Time: 15 minutes

🕒 Cook Time: 35–45 minutes

✅ Ingredients:

  • 4 boneless skinless chicken breasts (or thighs)

  • 1 lb red potatoes, quartered or halved depending on size

  • 8 oz fresh green beans, trimmed

  • 3 tbsp olive oil, divided

  • 4 cloves garlic, minced

  • 1 lemon, zested and juiced

  • 1 tsp dried oregano

  • 1 tsp dried thyme (or Italian seasoning)

  • Salt and pepper, to taste

  • 1 tbsp fresh parsley, chopped (optional garnish)


👩‍🍳 Instructions:

1. Prep the Oven & Pan:

Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper or foil for easy cleanup.

2. Season the Potatoes:

In a bowl, toss red potatoes with 1 tbsp olive oil, salt, pepper, and ½ tsp thyme. Spread them out on the baking sheet and roast for 15 minutes.

3. Season the Chicken:

While the potatoes roast, combine the chicken with:

  • 2 tbsp olive oil

  • Minced garlic

  • Zest and juice of 1 lemon

  • 1 tsp oregano

  • ½ tsp thyme

  • Salt and pepper

Let it marinate while the potatoes finish their first roast.

4. Add Chicken & Green Beans:

Remove pan from oven. Push potatoes to one side.
Add green beans tossed in a little olive oil, salt, and pepper.
Place marinated chicken in the center of the pan.

5. Roast Everything:

Return pan to oven and roast for 20–25 minutes, or until:

  • Chicken is cooked through (internal temp 165°F)

  • Potatoes are tender

  • Beans are crisp-tender

Optional: Broil the last 2–3 minutes for a golden top.

6. Serve:

Sprinkle with fresh parsley and extra lemon juice if desired. Serve warm with pan juices spooned over the chicken.


💡 Tips:

  • Add red pepper flakes if you like a little heat.

  • Substitute sweet potatoes or asparagus for variety.

  • Great for meal prep—just store in containers for up to 4 days.
