Garlic Butter Steak Bites with Potatoes

Ingredients:

  • For the Steak Bites:

    • 1 lb sirloin steak (or ribeye), cut into bite-sized cubes

    • 2 tbsp olive oil

    • Salt and pepper, to taste

    • 1 tsp smoked paprika (optional)

    • 1/2 tsp garlic powder (optional)

  • For the Garlic Butter:

    • 4 tbsp unsalted butter

    • 4 cloves garlic, minced

    • 1 tsp fresh thyme (or 1/2 tsp dried thyme)

    • 1 tsp fresh rosemary, chopped (or 1/2 tsp dried)

    • 1 tbsp fresh parsley, chopped (for garnish)

  • For the Potatoes:

    • 1 lb baby potatoes (or Yukon Golds), cut into small cubes

    • 2 tbsp olive oil

    • Salt and pepper, to taste

    • 1/2 tsp onion powder (optional)

Instructions:

  1. Cook the Potatoes:

    • In a large skillet, heat 2 tbsp olive oil over medium-high heat.

    • Add the cubed potatoes to the skillet in a single layer. Season with salt, pepper, and onion powder (if using).

    • Cook for about 10-12 minutes, stirring occasionally, until the potatoes are crispy on the outside and tender on the inside. You can cover the skillet during the first 5 minutes to help the potatoes cook through faster, then uncover to get them crispy. Remove them from the skillet and set aside.

  2. Cook the Steak Bites:

    • Season the steak cubes generously with salt, pepper, smoked paprika, and garlic powder (if using).

    • In the same skillet, add 2 tbsp olive oil over medium-high heat. Once the oil is hot, add the steak cubes in a single layer. Work in batches if needed, to avoid overcrowding the pan.

    • Sear the steak bites for about 2-3 minutes per side until they reach your desired level of doneness (for medium-rare, aim for a nice brown crust and an internal temperature of around 130°F).

    • Remove the steak bites from the skillet and set them aside.

  3. Make the Garlic Butter Sauce:

    • In the same skillet, melt 4 tbsp of butter over medium heat.

    • Add the minced garlic, thyme, and rosemary to the butter. Cook for about 1-2 minutes, until the garlic is fragrant and golden but not burnt.

    • Stir in the cooked potatoes and steak bites, tossing everything in the garlic butter sauce. Let it all cook together for another 1-2 minutes so everything gets coated in that delicious garlic butter.

  4. Serve:

    • Garnish with fresh parsley and serve immediately, with a side of sour cream or a dipping sauce of your choice if desired.
