  • 1–1.5 lbs sirloin steak (or ribeye, NY strip), cut into 1-inch cubes

  • 1 tbsp olive oil

  • 3 tbsp unsalted butter

  • 4–5 garlic cloves, minced

  • 1 tbsp chopped fresh parsley (optional)

  • (Optional) Red pepper flakes or a squeeze of lemon for added kick

1. Prep the Steak

  • Pat steak cubes dry with paper towels (helps get a good sear).

  • Season generously with salt and pepper.

2. Sear the Steak Bites

  • Heat olive oil in a large skillet (cast iron preferred) over high heat.
