π Ingredients:
For the Steak:

1 to 1.5 lbs sirloin, ribeye, or NY strip steak

Salt & black pepper, to taste

1 tsp garlic powder

1 tbsp olive oil

2 tbsp unsalted butter (for basting)
For the Potatoes:

1 lb baby Yukon gold or red potatoes, halved or quartered

1 tbsp olive oil
-
Salt & pepper
-
1/2 tsp paprika (optional)
-
1/2 tsp garlic powder
Garlic Butter Sauce:
-
3 tbsp unsalted butter
-
4 cloves garlic, minced
-
1 tbsp chopped fresh parsley (or 1 tsp dried)

Optional: a squeeze of lemon for brightness
πͺ Instructions:
1. Prep and Par-Cook the Potatoes:

Boil potatoes in salted water for 6β8 minutes until just fork-tender. Drain and pat dry.

OR microwave in a bowl with a splash of water, covered, for 5β6 minutes.

2. Sear the Potatoes:

Heat 1 tbsp olive oil in a large skillet over medium-high heat.

Add par-cooked potatoes cut-side down. Season with salt, pepper, garlic powder, and paprika.

Cook until golden and crispy (about 5β7 minutes), stirring occasionally.

Push potatoes to one side of the pan.
3. Cook the Steak:

Season steak on both sides with salt, pepper, and garlic powder.

Add 1 tbsp olive oil and 2 tbsp butter to the skillet.

Sear steak for 3β5 minutes per side (depending on thickness and desired doneness).
