For the Steak:

  • 1 to 1.5 lbs sirloin, ribeye, or NY strip steak

  • Salt & black pepper, to taste

  • 1 tsp garlic powder

  • 1 tbsp olive oil

  • 2 tbsp unsalted butter (for basting)

For the Potatoes:

  • 1 lb baby Yukon gold or red potatoes, halved or quartered

  • 1 tbsp olive oil

  • Salt & pepper

  • 1/2 tsp paprika (optional)

  • 1/2 tsp garlic powder

Garlic Butter Sauce:

  • 3 tbsp unsalted butter

  • 4 cloves garlic, minced

  • 1 tbsp chopped fresh parsley (or 1 tsp dried)

  • Optional: a squeeze of lemon for brightness

1. Prep and Par-Cook the Potatoes:

  • Boil potatoes in salted water for 6–8 minutes until just fork-tender. Drain and pat dry.

    • OR microwave in a bowl with a splash of water, covered, for 5–6 minutes.

2. Sear the Potatoes:

  • Heat 1 tbsp olive oil in a large skillet over medium-high heat.

  • Add par-cooked potatoes cut-side down. Season with salt, pepper, garlic powder, and paprika.

  • Cook until golden and crispy (about 5–7 minutes), stirring occasionally.

  • Push potatoes to one side of the pan.

3. Cook the Steak:

  • Season steak on both sides with salt, pepper, and garlic powder.

  • Add 1 tbsp olive oil and 2 tbsp butter to the skillet.

  • Sear steak for 3–5 minutes per side (depending on thickness and desired doneness).

  • Spoon melted butter over the steak as it cooks.

  • Once cooked, transfer steak to a plate and let rest for 5 minutes.

4. Make the Garlic Butter Sauce:

  • In the same pan, reduce heat to low. Add 3 tbsp butter and the minced garlic.

  • Stir for about 30–60 seconds until garlic is fragrant (don’t burn it).

  • Add parsley and optional lemon juice. Mix and let it bubble slightly.

5. Combine and Serve:

  • Slice the rested steak and return it to the pan with the potatoes.

  • Toss everything in the garlic butter sauce.

  • Serve hot, with crusty bread or a green salad on the side.

  • Add mushrooms or green beans to the skillet for extra veggies.

  • Swap steak for chicken or shrimp if desired.
