🥩 Garlic Butter Steak and Potatoes
Ingredients (Serves 2–4):
🥔 For the Potatoes:
-
1 lb baby potatoes or Yukon golds, halved or quartered
-
1–2 tbsp olive oil
-
Salt & black pepper to taste
-
Optional: smoked paprika, rosemary, or thyme
🥩 For the Steak:
-
1 to 1½ lbs sirloin, ribeye, or NY strip, cut into bite-sized cubes
-
Salt & pepper to taste
-
1 tbsp oil (for searing)
🧄 Garlic Butter Sauce:
-
3–4 tbsp unsalted butter
-
4 garlic cloves, minced
-
1 tbsp chopped parsley (fresh)
-
Optional: splash of lemon juice or a pinch of chili flakes
🔧 Instructions:
1. Cook the Potatoes:
-
In a large skillet over medium heat, add oil and potatoes.
-
Season with salt, pepper, and optional paprika/herbs.
-
Cook covered for 10–12 minutes, stirring occasionally, until golden and fork-tender.
-
Transfer to a plate and set aside.
2. Sear the Steak:
-
Season steak bites with salt and pepper.
-
Add a little more oil to the same skillet and raise heat to medium-high.
-
Sear steak for 2–3 minutes per side until browned but still juicy (don’t overcrowd the pan).
-
Remove and set aside (leave the juices!).
3. Make Garlic Butter:
-
Lower heat to medium.
-
Add butter and garlic to the pan. Sauté 30 seconds until fragrant.
-
Return steak and potatoes to the pan. Toss everything together to coat in the garlic butter.
4. Finish & Serve:
-
Sprinkle with fresh parsley and a squeeze of lemon if using.
-
Serve immediately with crusty bread or a side salad.
🧠 Tips:
-
Rest steak before serving for max juiciness.
-
Want extra richness? Add a spoon of cream or grated Parmesan at the end.
-
Use ghee or clarified butter for higher heat tolerance if needed.
