Ingredients (2 servings):

  • 200g (about 7 oz) pasta (spaghetti, fettuccine, or linguine work great)

  • 4 tbsp unsalted butter

  • 4 cloves garlic, finely minced

  • Salt & freshly cracked black pepper, to taste

  • 1/4 cup pasta water (reserved from cooking)

  • Optional:

    • 1/4 tsp chili flakes (for a bit of heat)

    • 1–2 tbsp grated Parmesan cheese

    • Fresh parsley, chopped

    • A squeeze of lemon juice or lemon zest


👩‍🍳 Instructions:

  1. Cook the Pasta:
    Boil the pasta in salted water according to the package instructions. Reserve about 1/4 cup of the pasta water, then drain.

  2. Make the Garlic Butter Sauce:
    In a large skillet over medium heat, melt the butter. Add the garlic and sauté gently for about 1–2 minutes until fragrant (don’t let it brown).
    Add chili flakes here if using.

  3. Toss the Pasta:
    Add the cooked pasta to the skillet and toss to coat in the garlic butter. Pour in a bit of the reserved pasta water to help emulsify the sauce and make it silky.

  4. Season and Finish:
    Add salt and pepper to taste. Toss in chopped parsley, a sprinkle of parmesan (if using), and a little lemon juice or zest for brightness.

  5. Serve Immediately:
    Plate and top with extra parmesan, parsley, and a drizzle of good olive oil if desired.
