Garlic Butter Chicken Bites and Asparagus

Here’s a quick and incredibly flavorful one-pan meal: Garlic Butter Chicken Bites with Asparagus. It’s juicy, garlicky, and ready in about 20 minutes — perfect for busy weeknights, meal prep, or low-carb dinners!


🍗 Garlic Butter Chicken Bites & Asparagus

🧾 Ingredients:

For the Chicken:

  • 1.5 lbs boneless, skinless chicken breasts or thighs, cut into bite-sized pieces

  • Salt & pepper to taste

  • 1 tsp paprika

  • ½ tsp onion powder

  • 2 tbsp olive oil

  • 3 tbsp butter

  • 4 garlic cloves, minced

  • 1 tbsp chopped fresh parsley or thyme (optional)

  • Juice of ½ lemon (optional)

For the Asparagus:

  • 1 bunch asparagus, ends trimmed and cut into 2–3 inch pieces

  • 1 tbsp olive oil

  • Salt & pepper, to taste

  • Optional: pinch of red pepper flakes


👩‍🍳 Instructions:

1. Season the Chicken:

  • Toss chicken pieces with salt, pepper, paprika, and onion powder.

2. Sear the Chicken:

  • Heat 2 tbsp olive oil in a large skillet over medium-high heat.

  • Add chicken in a single layer (work in batches if needed). Sear for 3–4 minutes per side until golden and cooked through.

  • Remove chicken and set aside.

3. Cook the Asparagus:

  • In the same pan, add a bit more oil if needed.

  • Sauté asparagus with salt, pepper, and red pepper flakes for 3–4 minutes, until crisp-tender.

4. Make Garlic Butter & Combine:

  • Push asparagus to one side of the pan.

  • Add butter and garlic to the empty side. Stir for 30 seconds until fragrant.

  • Add the chicken back into the pan. Toss everything in the garlic butter until well coated.

  • Squeeze lemon juice on top and sprinkle with herbs if using.


🍽️ Serve With:

  • Rice, quinoa, or mashed potatoes

  • Cauliflower rice for low-carb

  • Crusty bread to soak up the garlic butter


🔁 Tips & Variations:

  • Add mushrooms or bell peppers for extra veggies

  • Swap asparagus for broccoli or green beans

  • Use chicken thighs for extra juiciness
