🍗 Garlic Butter Chicken Bites & Asparagus
🧾 Ingredients:
For the Chicken:

1.5 lbs boneless, skinless chicken breasts or thighs, cut into bite-sized pieces

Salt & pepper to taste

1 tsp paprika
-
½ tsp onion powder
-
2 tbsp olive oil
-
3 tbsp butter
-
4 garlic cloves, minced
-
1 tbsp chopped fresh parsley or thyme (optional)

Juice of ½ lemon (optional)
For the Asparagus:

1 bunch asparagus, ends trimmed and cut into 2–3 inch pieces

1 tbsp olive oil
-
Salt & pepper, to taste

Optional: pinch of red pepper flakes
👩🍳 Instructions:
1. Season the Chicken:

Toss chicken pieces with salt, pepper, paprika, and onion powder.
2. Sear the Chicken:

Heat 2 tbsp olive oil in a large skillet over medium-high heat.

Add chicken in a single layer (work in batches if needed). Sear for 3–4 minutes per side until golden and cooked through.

Remove chicken and set aside.
3. Cook the Asparagus:

In the same pan, add a bit more oil if needed.

Sauté asparagus with salt, pepper, and red pepper flakes for 3–4 minutes, until crisp-tender.
4. Make Garlic Butter & Combine:

Push asparagus to one side of the pan.

Add butter and garlic to the empty side. Stir for 30 seconds until fragrant.

Add the chicken back into the pan. Toss everything in the garlic butter until well coated.

Squeeze lemon juice on top and sprinkle with herbs if using.
