4 medium russet or Yukon gold potatoes (scrubbed clean)

3 tbsp olive oil (or melted butter)

3 cloves garlic (minced)

1 tsp dried thyme (or use fresh)

1 tsp dried rosemary (crushed)

1 tsp dried parsley (or 1 tbsp fresh chopped)

½ tsp salt (to taste)

½ tsp black pepper

Optional: grated Parmesan cheese, sour cream, chives for topping
🔪 Instructions:

Preheat Oven:
Preheat your oven to 400°F (200°C). -
Prep Potatoes:
Pat the potatoes dry. For faster cooking and more flavor, cut them in half or quarters (lengthwise), or leave them whole if you prefer. -
Make Herb Mixture:
In a small bowl, mix olive oil, garlic, thyme, rosemary, parsley, salt, and pepper. -
Coat Potatoes:
Toss potatoes in the herb mixture until well coated. Place them cut-side down on a baking sheet lined with parchment or foil. -
Bake:
Bake for 45–60 minutes, flipping once halfway through if using whole or halved potatoes, until golden brown and crispy on the edges and tender inside. -
Serve:
Garnish with fresh parsley, optional Parmesan, or a dollop of sour cream and chives.
