Ingredients:

  • 2 lbs pork ribs (baby back ribs or spare ribs)
  • 1 tablespoon olive oil or vegetable oil
  • 1 medium onion, finely chopped
  • 5 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 2 tablespoons oyster sauce
  • 2 tablespoons hoisin sauce (optional, for a sweet touch)
  • 1/4 cup brown sugar
  • 1/2 cup pineapple juice (or you can use orange juice as an alternative)
  • 1 tablespoon vinegar (apple cider or white vinegar)
  • 1 teaspoon ground black pepper
  • 1/2 teaspoon salt
  • 1-2 bay leaves
  • 1/4 cup water (adjust for consistency)
  • Fresh herbs for garnish (like cilantro or parsley)

Instructions:

1. Prepare the Pork Ribs:

  • Cut the pork ribs into individual pieces or into manageable sections, depending on your preference.
  • If the ribs have a membrane on the back, remove it by gently pulling it off with a paper towel for a more tender result.

2. Sear the Ribs:

  • Heat the olive oil in a large pot or Dutch oven over medium-high heat.
  • Once the oil is hot, sear the pork ribs for about 3-4 minutes on each side until they are nicely browned. This step will give the ribs a rich flavor.

3. Make the Sauce:

  • After searing, remove the ribs and set them aside. In the same pot, add the chopped onions and garlic. Sauté for about 2 minutes until softened and fragrant.
  • Add the soy sauce, oyster sauce, hoisin sauce (if using), brown sugar, pineapple juice, vinegar, black pepper, salt, and bay leaves. Stir well to combine.
  • Add about 1/4 cup of water and bring the mixture to a simmer.

4. Cook the Ribs:

  • Return the seared pork ribs to the pot, making sure they’re covered with the sauce.
  • Lower the heat to a simmer, cover the pot, and cook the ribs for about 1.5 to 2 hours. Occasionally check the ribs and add a little water if the sauce is reducing too much.
  • After 1.5 to 2 hours, the ribs should be tender and the sauce should have thickened into a delicious glaze.

5. Serve:

  • Once the ribs are cooked and tender, remove them from the sauce and place them on a serving dish.
  • If desired, drizzle the sauce over the ribs for extra flavor.
  • Garnish with fresh herbs like cilantro or parsley.

6. Optional:

  • You can also serve this dish with steamed rice or mashed potatoes to soak up the flavorful sauce.
