Fried Rice

Fried Rice is a classic dish that’s super versatile, quick, and delicious! You can make it with leftover rice and toss in whatever ingredients you have on hand. Here’s a simple recipe for fried rice that you can easily customize.

Simple Fried Rice Recipe

Ingredients:

  • 2 cups cooked rice (preferably cold and a day old, as it helps with texture)

  • 2 tbsp vegetable oil (or any neutral oil)

  • 2 eggs (beaten)

  • 1 cup mixed vegetables (like peas, carrots, corn, or bell peppers)

  • 1 small onion (diced)

  • 2-3 cloves garlic (minced)

  • 2-3 tbsp soy sauce (to taste)

  • 1 tbsp sesame oil (optional, for flavor)

  • 1/2 tsp ground black pepper

  • 2 green onions (chopped for garnish)

  • Optional proteins: Shrimp, chicken, pork, or tofu (about 1 cup, cooked and diced)

  • Optional: Chili flakes or sriracha (for a bit of heat)

Instructions:

  1. Prepare the Rice:
    If you haven’t already, cook the rice. It’s best to use rice that has been cooled in the fridge, as it won’t be too sticky and will fry up better. If using freshly cooked rice, spread it on a plate to cool down a bit before using it.

  2. Scramble the Eggs:
    Heat about 1 tablespoon of vegetable oil in a large skillet or wok over medium heat.
    Add the beaten eggs and cook until scrambled (about 1-2 minutes). Once done, remove the eggs from the pan and set aside.

  3. Sauté the Vegetables:
    In the same skillet or wok, add another tablespoon of oil.
    Add the diced onion and sauté for about 2-3 minutes until translucent.
    Add the garlic and cook for another 30 seconds until fragrant.
    Then, toss in the mixed vegetables and cook for about 3-4 minutes, or until they’re tender.

  4. Add the Rice:
    Add the cold rice to the skillet or wok, breaking up any clumps. Stir well to mix with the vegetables. Cook for 3-4 minutes, allowing the rice to get slightly crispy on the edges.

  5. Season the Rice:
    Add the soy sauce, sesame oil, and black pepper. Stir everything together and taste for seasoning. If you prefer a saltier taste, add more soy sauce.

  6. Add the Eggs:
    Return the scrambled eggs to the skillet. Stir them into the rice until evenly mixed.

  7. Optional Protein:
    If you’re adding any protein (like chicken, shrimp, or tofu), toss it in now and cook for another 2-3 minutes, until everything is well combined and heated through.

  8. Finish and Garnish:
    Remove the fried rice from the heat and garnish with chopped green onions. If you like a bit of spice, add chili flakes or sriracha on top.

  9. Serve:
    Serve your fried rice hot as a side dish or main course.


Tips for Perfect Fried Rice:

  • Use day-old rice: Freshly cooked rice tends to be too sticky and clumps together. Let your rice cool in the fridge for a few hours or overnight for the best texture.

  • Don’t over-crowd the pan: If you’re making a large batch, cook it in batches to avoid steaming the rice. This will help it get crispy and golden.

  • Customize: Add your favorite vegetables, proteins, or spices to make the fried rice your own.


Serving Ideas:

  • Serve as a side with grilled meats or Asian-inspired dishes like teriyaki chicken or kung pao shrimp.

  • It’s also great as a standalone dish with a side of spring rolls or dumplings.
