Here’s a delicious recipe for Fried Potatoes and Onions/Peppers with Smoked Sausage that makes for a hearty and flavorful meal. This one-pan dish is easy to prepare and perfect for a comforting dinner.

Fried Potatoes and Onions/Peppers with Smoked Sausage

Ingredients:

  • 4 medium potatoes, peeled and diced
  • 1 large onion, sliced
  • 1 bell pepper (red, green, or yellow), sliced
  • 2 smoked sausages (such as kielbasa), sliced into rounds
  • 2 tablespoons olive oil or vegetable oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper, to taste
  • Fresh parsley (optional, for garnish)

Instructions:

  1. Prep the ingredients: Peel and dice the potatoes into bite-sized pieces. Slice the onion and bell pepper. Cut the smoked sausage into rounds or half-moons.
  2. Cook the potatoes: Heat 1 tablespoon of oil in a large skillet or frying pan over medium heat. Add the diced potatoes and season with salt, pepper, garlic powder, and paprika. Stir occasionally, cooking for 10-12 minutes, until the potatoes are golden brown and crispy on the outside but tender inside. You may need to add a bit more oil during this process if the potatoes are sticking.
  3. Add the sausage: Once the potatoes are nearly done, add the sliced smoked sausage to the pan. Cook for another 5-7 minutes, stirring occasionally, until the sausage is heated through and slightly browned.
  4. Add the onions and peppers: Push the potatoes and sausage to one side of the pan. Add the remaining tablespoon of oil to the empty side and toss in the sliced onions and peppers. Sauté for 4-5 minutes until they are tender and slightly caramelized. You can stir them into the potatoes and sausage for the last couple of minutes of cooking.
  5. Combine and serve: Once everything is cooked, stir everything together in the pan. Taste and adjust seasoning if needed. Garnish with fresh parsley if desired and serve hot.

Tips:

  • You can also add a little bit of hot sauce or crushed red pepper flakes if you like some heat.
  • For extra flavor, sprinkle some shredded cheese on top and let it melt right before serving.
  • Serve this dish with a side of salad or some crusty bread to make a complete meal.
