🧀 Fried Pickles Stuffed with Cheese Recipe

📝 Ingredients:

For the pickles:

  • 12 large dill pickle spears (or thick pickle chips)

  • 4 oz cream cheese, softened

  • 1/2 cup shredded cheddar cheese (or pepper jack for spice)

  • 1/4 tsp garlic powder

  • 1/4 tsp paprika

  • Toothpicks (optional)

For the coating:

  • 1 cup all-purpose flour

  • 2 large eggs

  • 1 tbsp water

  • 1 cup seasoned breadcrumbs (panko or regular)

  • Salt & pepper to taste

For frying:

  • Oil for deep frying (vegetable or canola)


🧑‍🍳 Instructions:

1. Prep the Pickles

  • Pat the pickles dry with paper towels to remove excess moisture.

  • If using whole spears, carefully cut a slit down the middle (lengthwise) without slicing all the way through.

  • For chips, use two to make a little “sandwich.”

2. Make the Cheese Filling

  • In a small bowl, mix cream cheese, shredded cheddar, garlic powder, and paprika until well combined.

3. Stuff the Pickles

  • Spoon or pipe the cheese mixture into the slit of each pickle spear (or between two chips).

  • Use toothpicks to hold them together if needed.

  • Place them in the freezer for 15–20 minutes to firm up. This helps with frying.

4. Bread the Pickles

  • Set up a dredging station:

    • Bowl 1: Flour (seasoned with a little salt & pepper)

    • Bowl 2: Eggs + 1 tbsp water (whisked)

    • Bowl 3: Breadcrumbs

  • Dip each stuffed pickle in flour → egg → breadcrumbs. For extra crisp, double-dip in egg and breadcrumbs again.

5. Fry ‘Em Up

  • Heat oil to 350°F (175°C) in a deep fryer or heavy pan.

  • Carefully place pickles in the hot oil and fry for 2–3 minutes until golden brown.

  • Remove and drain on paper towels.

6. Serve

  • Serve hot with ranch, spicy mayo, or chipotle aioli.

  • Use bread & butter pickles for a sweet-and-savory twist.

  • Add crumbled bacon to the cheese mix for a smoky kick.

  • Try baking in an air fryer at 400°F (200°C) for 8–10 minutes for a lighter version.
