4 medium green tomatoes (firm and unripe)

2 eggs

½ cup buttermilk (or regular milk with a splash of vinegar)

¾ cup cornmeal

¼ cup breadcrumbs (optional for extra crunch)

Vegetable oil for frying (canola or peanut oil works well)

Prep the Tomatoes

Slice tomatoes into ¼–½ inch thick rounds.

Lightly salt both sides and let them sit on paper towels for 10 minutes to draw out moisture.

Bowl 1: Flour + salt + pepper
