Instructions:
1. Prep the Potatoes:

Peel (optional) and cut potatoes into ¼-inch thick sticks.

Place the cut fries in a large bowl of cold water and soak for at least 1 hour (or overnight) to remove excess starch. This helps them get crispy.
2. First Fry (Blanching):

Drain and pat the fries completely dry using clean towels or paper towels.
