4 large russet potatoes

Instructions:
1. Peel & Cut:

Peel potatoes (or leave skin on for rustic style).

Cut into ¼-inch thick sticks. Try to keep them uniform for even cooking.
2. Soak:

Place the cut fries in a large bowl of cold water.

Soak for at least 30 minutes (or up to a few hours). This removes excess starch and helps them crisp up.
3. Dry Thoroughly:

Drain and pat the fries completely dry with paper towels or a clean kitchen towel.
4. First Fry (Blanching):

Heat oil in a deep fryer or heavy pot to 300°F (150°C).

Fry the potatoes in batches for 4–5 minutes — they should be soft but not colored.

5. Second Fry (Crisping):
