1. Prep the Potatoes

Peel (optional) and cut potatoes into even baton-style strips (about 1 cm or ½ inch thick).

Rinse the fries under cold water to remove excess starch.

Soak in cold water for at least 30 minutes (or up to overnight in the fridge).

Drain and pat completely dry with a towel — this is essential for crispiness and safety when frying.
2. First Fry (Blanching)
