🧂 Ingredients:

4 large russet potatoes (best for fries)

Vegetable oil for frying (canola, peanut, or sunflower)

🔪 Instructions:
1. Peel & Cut:

Peel (optional) and cut potatoes into ¼-inch thick sticks.

Try to make them uniform for even cooking.
2. Soak:

Soak fries in a large bowl of cold water for at least 30 minutes, or up to 12 hours in the fridge.

This removes excess starch and helps them get crispy.
3. Dry Completely:

Drain and pat dry thoroughly with a clean kitchen towel. Moisture = soggy fries.
4. Fry (Two-Stage Method for Best Results):
First Fry (Blanching):

Heat oil to 325°F (160°C).

Fry the potatoes in batches for 3–5 minutes, until soft but not browned.

Remove with a slotted spoon and drain on paper towels.
Second Fry (Crisping):

Increase oil heat to 375°F (190°C).

Fry again in batches for 2–3 minutes, or until golden and crispy.

Drain on paper towels and immediately sprinkle with salt.

No thermometer? Drop a test fry — it should bubble but not brown too fast.

Want to bake instead? Toss with oil, bake at 425°F (220°C) for 35–45 min, flipping halfway.

Air fryer? Cook at 380°F (193°C) for 15–20 minutes, shaking halfway.
