A Fluffy Yogurt Cloud Cake is a light, airy, and delicious dessert that combines the creaminess of yogurt with the softness of a chiffon-style cake. It’s perfect for those who want a sweet treat that’s not too heavy. Here’s a simple recipe for making this delightful cake!

Ingredients:

For the Cake:

  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3 large eggs (separate the whites and yolks)
  • 1/2 cup plain yogurt (full-fat or Greek yogurt)
  • 1/4 cup vegetable oil (or melted butter)
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon cream of tartar (optional, to help stabilize the egg whites)

For the Whipped Yogurt Topping:

  • 1/2 cup plain yogurt (Greek or regular, based on preference)
  • 1/4 cup heavy whipping cream
  • 2 tablespoons powdered sugar (or more to taste)
  • 1 teaspoon vanilla extract
  • Fresh fruit (optional, for garnish – berries, kiwi, etc.)

Instructions:

1. Preheat the Oven:

  • Preheat your oven to 325°F (165°C).
  • Grease an 8-inch round cake pan and line the bottom with parchment paper for easy removal.

2. Prepare the Dry Ingredients:

  • In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

3. Whisk the Egg Yolks:

  • In a separate large bowl, whisk the egg yolks with granulated sugar until they become pale and creamy.
  • Add the yogurt, vegetable oil, and vanilla extract, and mix until smooth and well combined.

4. Beat the Egg Whites:

  • In a clean, dry bowl, beat the egg whites and cream of tartar (if using) with an electric mixer until soft peaks form.
  • Gradually add a small amount of sugar (about 1-2 tablespoons) and continue beating until stiff peaks form.

5. Combine the Mixtures:

  • Gradually fold the dry ingredients into the egg yolk mixture, mixing until just combined. Be gentle to avoid deflating the batter.
  • Then, carefully fold the beaten egg whites into the batter in 2-3 additions, making sure to keep the batter light and airy.

6. Bake:

  • Pour the batter into the prepared cake pan and smooth the top with a spatula.
  • Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean and the cake is golden on top.
  • Remove from the oven and let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

7. Prepare the Whipped Yogurt Topping:

  • In a bowl, whisk together the whipping cream, powdered sugar, and vanilla extract until stiff peaks form.
  • Gently fold in the plain yogurt until smooth and fluffy.

8. Assemble the Cake:

  • Once the cake has cooled completely, slice it in half horizontally if you want to add more layers of yogurt topping.
  • Spread a generous amount of the whipped yogurt topping over the top of the cake.
  • Garnish with fresh fruit such as berries or kiwi, or you can even add a drizzle of honey or fruit compote.

9. Serve:

  • Slice the cake and serve chilled for a refreshing dessert!

Tips:

  • For extra flavor: You can add a teaspoon of lemon zest or orange zest to the batter for a citrusy note.
  • For a richer texture: You can use Greek yogurt in the cake and topping for a thicker consistency.
  • Storage: The cake can be stored in the refrigerator, covered, for up to 3-4 days.
