Ingredients:

  • 2 1/2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/2 cup unsalted butter, melted and slightly cooled
  • 1 cup buttermilk (or regular milk if you don’t have buttermilk)
  • 2 teaspoons pure vanilla extract
  • 1/2 teaspoon vanilla bean paste (optional, for extra vanilla flavor)

Directions:

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or lightly grease it.
  2. Combine Dry Ingredients:
    • In a large bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. Mix Wet Ingredients:
    • In another bowl, whisk together the sugar, eggs, melted butter, buttermilk, and vanilla extract (and vanilla bean paste, if using).
  4. Combine Wet and Dry Ingredients:
    • Gradually add the wet ingredients to the dry ingredients, stirring gently with a spatula or wooden spoon until just combined. Be careful not to overmix, as that can lead to dense muffins. It’s okay if the batter is a little lumpy.
  5. Spoon the Batter:
    • Spoon the batter into the muffin tin, filling each cup about 2/3 full. If you’d like extra height, you can fill them up almost to the top.
  6. Bake:
    • Bake the muffins for 18-22 minutes, or until a toothpick inserted into the center comes out clean or with just a few crumbs. The tops should be golden brown and slightly domed.
  7. Cool and Serve:
    • Let the muffins cool in the pan for about 5 minutes, then transfer them to a wire rack to cool completely. If desired, serve them warm with a little butter or jam.

Tips:

  • For extra fluffiness: Be sure not to overmix the batter. Mix until the dry ingredients are just incorporated. Overmixing can result in dense muffins.
  • Add-ins: Feel free to add mix-ins like chocolate chips, berries, or chopped nuts to customize the muffins.
  • Substitute for buttermilk: If you don’t have buttermilk, you can use regular milk mixed with 1 tablespoon of lemon juice or vinegar. Let it sit for 5 minutes to “sour” before using.
