🛒 Ingredients (makes 12 rolls):

1 cup mashed potatoes (plain, no butter or milk)

3½ cups (420g) all-purpose flour (plus more for kneading)

2¼ tsp (1 packet) active dry yeast

¼ cup (50g) sugar

1 tsp salt

½ cup (120 ml) milk, warm (not hot)

¼ cup (60 ml) water, warm
-
¼ cup (60g) unsalted butter, softened

1 large egg
👩🍳 Instructions:
1. Activate the yeast:

In a small bowl, mix warm water, a pinch of sugar, and yeast.

Let sit for 5–10 minutes until foamy.
2. Mix the dough:

In a large bowl (or mixer), combine mashed potatoes, milk, sugar, butter, egg, and salt.

Add in the foamy yeast mixture.

Gradually stir in the flour, about ½ cup at a time, until a soft dough forms.
3. Knead:

Knead on a floured surface for 8–10 minutes (or 5 minutes in a mixer with a dough hook), until smooth and elastic.

Dough will be soft but should not stick badly to your hands.
4. First rise:

Place in an oiled bowl, cover with a towel or plastic wrap.

Let rise in a warm spot until doubled in size, about 1–1½ hours.
5. Shape the rolls:

Punch down the dough and divide into 12 equal pieces.

Shape into smooth balls and place in a greased 9×13-inch baking dish or on a lined baking tray (slightly spaced apart).
6. Second rise:

Cover loosely and let rise again until puffy, about 30–45 minutes.
7. Bake:

Preheat oven to 375°F (190°C).

Bake for 18–22 minutes, until golden brown on top.
