Here’s a recipe for Fluffy Baked Cheesecake Bars — light, creamy, and with a tender crumb, these bars are perfect for dessert or a special treat. They have a buttery crust and a smooth cheesecake filling that’s rich but airy.


🍰 Fluffy Baked Cheesecake Bars

Ingredients:

For the crust:

  • 1 1/2 cups graham cracker crumbs (or digestive biscuits, crushed)

  • 1/4 cup granulated sugar

  • 6 tbsp unsalted butter, melted

For the cheesecake filling:

  • 16 oz (450g) cream cheese, softened

  • 2/3 cup granulated sugar

  • 3 large eggs

  • 1/2 cup sour cream

  • 1 tsp vanilla extract

  • 2 tbsp all-purpose flour (optional, for a firmer texture)


🧑‍🍳 Instructions:

1. Prep and Preheat:

  • Preheat your oven to 325°F (163°C).

  • Line a 9×9-inch baking pan with parchment paper or lightly grease it.

2. Make the crust:

  • In a medium bowl, combine graham cracker crumbs, sugar, and melted butter.

  • Press the mixture firmly into the bottom of the prepared pan.

  • Bake the crust for about 10 minutes, then remove from the oven and let cool slightly.

3. Make the cheesecake filling:

  • In a large bowl, beat the softened cream cheese until smooth and creamy.

  • Add the sugar and beat until well combined.

  • Add the eggs one at a time, mixing well after each addition.

  • Mix in the sour cream and vanilla extract until smooth.

  • If using, stir in the flour to help the filling set.

4. Bake the cheesecake bars:

  • Pour the cheesecake filling over the pre-baked crust, spreading it evenly.

  • Bake at 325°F (163°C) for about 35–40 minutes, or until the edges are set but the center still slightly jiggles.

  • Turn off the oven, crack the door open, and let the cheesecake bars cool in the oven for 1 hour. This helps prevent cracks.

5. Chill:

  • Remove from oven and refrigerate for at least 3 hours, preferably overnight, until fully set.

6. Serve:

  • Lift the cheesecake out using the parchment paper and cut into bars.

  • Serve plain, or top with fresh berries, fruit compote, or a drizzle of chocolate or caramel sauce.


✅ Tips:

  • Use full-fat cream cheese for the best texture.

  • Avoid overmixing once eggs are added to keep the filling fluffy.

  • You can add lemon zest or a tablespoon of lemon juice for a bright flavor twist.

  • Store leftovers covered in the fridge for up to 4 days.
