Ingredients:

For the Pâte à Choux (Choux Pastry):

  • 1 cup water
  • 1/2 cup unsalted butter

  • 1/4 teaspoon salt
  • 4 large eggs (room temperature)

For the Cream Filling:

  • 2 cups heavy cream (whipping cream)
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract

  • 1/2 cup powdered sugar
  • 1-2 teaspoons water or milk
  • 1/2 teaspoon vanilla extract

Instructions:

Making the Pâte à Choux (Choux Pastry):

  1. Preheat the oven: Set your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone mat.
  2. Prepare the dough: In a medium saucepan, combine water and butter over medium-high heat. Bring to a boil, ensuring the butter melts completely.
  3. Add the flour: Once the water and butter mixture is boiling, add flour and salt all at once. Stir vigorously with a wooden spoon until the dough pulls away from the sides of the pan, forming a ball. Continue stirring for another 1-2 minutes to cook out the raw flour taste.
  4. Cool the dough: Transfer the dough to a bowl to cool for about 5 minutes. This step is crucial to prevent the eggs from cooking when added.
  5. Add the eggs: Add the eggs one at a time, beating well after each addition until the dough becomes smooth and glossy. The dough should hold its shape and be a bit sticky but firm.
  6. Pipe the dough: Transfer the dough to a piping bag fitted with a large round tip. Pipe small mounds (about 1.5 inches in diameter) onto the baking sheet, spacing them about 2 inches apart.
  7. Bake: Bake the puffs for about 20-25 minutes or until they are golden brown and puffed up. Do not open the oven door for the first 15 minutes of baking to prevent them from deflating.
  8. Cool: Remove the puffs from the oven and let them cool on a wire rack. Once they are fully cooled, carefully cut a small slit in each one to allow space for filling.

Making the Cream Filling:

  1. Whip the cream: In a chilled bowl, combine heavy cream, powdered sugar, and vanilla extract. Whisk with an electric mixer or hand whisk until soft peaks form. Be careful not to over-whip the cream.
  2. Fill the puffs: Once the cream puffs have cooled, fill a piping bag with the whipped cream. Insert the piping tip into the slit in each puff and fill it generously with the cream. You can also slice the puffs in half and spoon the cream inside.

Optional Glaze:

  1. Prepare the glaze: In a small bowl, whisk together the powdered sugar, milk or water, and vanilla extract until smooth and glossy.
  2. Drizzle over the puffs: Lightly drizzle the glaze over the top of each cream puff for a shiny, sweet finish.

Serving Suggestions:

  • Serve the cream puffs as they are, or dust with a little extra powdered sugar for a finishing touch.
  • For a chocolate cream puff, drizzle some chocolate ganache over the top.
  • For a different flavor, mix in a little lemon zest or almond extract into the whipped cream filling.

  • Do not open the oven during the first 15 minutes of baking to prevent deflation.
