“Elegant White Chocolate Raspberry Cheesecake”

Here’s a luscious recipe for an Elegant White Chocolate Raspberry Cheesecake — rich, creamy, with the perfect balance of sweet white chocolate and tangy raspberries. It’s a showstopper dessert for special occasions!


🍰 Elegant White Chocolate Raspberry Cheesecake

🧂 Ingredients:

Crust:

  • 1 ½ cups graham cracker crumbs (or digestive biscuits)

  • ⅓ cup unsalted butter, melted

  • 2 tbsp sugar

Filling:

  • 24 oz (680g) cream cheese, softened

  • 1 cup granulated sugar

  • 3 large eggs

  • 8 oz (225g) white chocolate, melted and slightly cooled

  • 1 tsp vanilla extract

  • ½ cup sour cream or heavy cream

  • 1 ½ cups fresh or frozen raspberries (if frozen, thaw and drain)

Topping (optional):

  • Fresh raspberries

  • White chocolate shavings or curls

  • Mint leaves for garnish


👩‍🍳 Instructions:

1. Prepare the Crust:

  • Preheat oven to 325°F (160°C).

  • Mix graham cracker crumbs, melted butter, and sugar until combined.

  • Press firmly into the bottom of a 9-inch springform pan.

  • Bake for 8–10 minutes. Remove and cool.

2. Make the Filling:

  • Beat cream cheese and sugar together until smooth and creamy.

  • Add eggs one at a time, beating well after each.

  • Stir in melted white chocolate and vanilla.

  • Blend in sour cream or heavy cream until smooth.

  • Gently fold in raspberries — a few whole, some slightly crushed for swirls.

3. Bake:

  • Pour filling over cooled crust.

  • Bake at 325°F (160°C) for 50–60 minutes until edges are set and center slightly jiggles.

  • Turn off oven, leave cheesecake inside with door ajar for 1 hour (helps prevent cracking).

4. Cool & Chill:

  • Remove cheesecake from oven.

  • Let cool completely at room temperature.

  • Refrigerate for at least 4 hours, preferably overnight.

5. Serve:

  • Remove from springform pan.

  • Garnish with fresh raspberries, white chocolate shavings, and mint leaves.

  • Slice and serve chilled.


🍽️ Tips:

  • For easier removal, run a knife around the edges before releasing the springform.

  • Use high-quality white chocolate for best flavor and smooth texture.

  • To prevent cracks, avoid overmixing and do the slow cooling step in the oven.
