Eggnog Oatmeal Breakfast Cake Recipe

Ingredients:

    • 1/4 teaspoon salt
    • 1 teaspoon baking powder
    • 1 tablespoon unsalted butter, melted (or coconut oil)
    • 1/2 cup raisins or dried cranberries (optional, for added texture and sweetness)
  • For the topping (optional):
    • 1/4 cup chopped pecans or walnuts (for a nice crunch)
    • Powdered sugar for dusting (optional)
    • A drizzle of extra eggnog or maple syrup (optional)

Instructions:

1. Preheat the Oven:

  • Preheat your oven to 350°F (175°C) and grease or line an 8×8-inch baking dish with parchment paper.

2. Prepare the Wet Ingredients:

  • In a large bowl, whisk together the eggnog, egg, brown sugar (or maple syrup), vanilla extract, and melted butter (or coconut oil) until smooth and well combined.

3. Mix the Dry Ingredients:

  • In a separate bowl, combine the rolled oats, ground cinnamon, ground nutmeg, salt, and baking powder. Stir to combine.
