Yesss — Easy Sausage Muffins are the ultimate grab-and-go breakfast or brunch snack. Hearty, cheesy, savory, and best of all… super easy to make. Perfect for meal prep or feeding a hungry crowd.

Here’s a foolproof recipe that hits all the cozy notes:


Easy Sausage Muffins

Ingredients (makes 12 muffins):

  • 1 lb ground breakfast sausage (pork or turkey)

  • 1 cup shredded cheddar cheese

  • 1 cup milk

  • 1 cup all-purpose flour

  • 1 teaspoon baking powder

  • ½ teaspoon salt

  • 2 eggs, beaten

  • Optional: diced bell pepper, green onion, or a pinch of garlic/onion powder


Instructions:

  1. Preheat oven to 375°F (190°C). Lightly grease or line a 12-cup muffin tin.

  2. Cook the sausage:

    • In a skillet over medium heat, cook the sausage until browned and crumbled.

    • Drain excess grease and let cool slightly.

  3. Mix the batter:

    • In a large bowl, whisk together flour, baking powder, and salt.

    • Add in the milk and beaten eggs, stir until just combined.

    • Fold in the cooked sausage, shredded cheese, and any extras (like peppers or green onions).

  4. Fill the muffin cups:

    • Spoon the mixture evenly into the muffin tin, filling each about ¾ full.

  5. Bake for 20–25 minutes, or until muffins are golden brown and cooked through.

  6. Cool slightly, then devour warm or store for later.


Storage Tips:

  • Fridge: Up to 5 days — reheat in the microwave or toaster oven.

  • Freezer: Wrap individually and freeze. Pop into the microwave straight from frozen (about 45–60 seconds).

  • Spicy: Use hot sausage and add a pinch of red pepper flakes.
