Easy Sausag Peppers and Onions

Here’s a super easy and delicious Sausage, Peppers, and Onions recipe! It’s perfect for busy weeknights and comes together in one pan. Serve it on its own, over rice or pasta, or in a sandwich roll for a classic sausage hoagie.


🌭 Easy Sausage, Peppers & Onions

🍽️ Servings:

4–6

30–40 minutes


🧂 Ingredients:

  • 1.5 lbs Italian sausage links (mild, sweet, or hot)

  • 2 tbsp olive oil

  • 3 bell peppers, sliced (use a mix of red, yellow, green)

  • 1 large onion, sliced

  • 3 cloves garlic, minced

  • ½ tsp dried oregano

  • ½ tsp salt, or to taste

  • ¼ tsp black pepper

  • 1 tbsp tomato paste (optional, adds depth)

  • ¼ cup water or chicken broth

  • Fresh basil or parsley for garnish (optional)


👨‍🍳 Instructions:

  1. Cook the Sausage:

    • In a large skillet or sauté pan, heat 1 tbsp olive oil over medium heat.

    • Add sausage links and cook, turning occasionally, until browned on all sides (about 8–10 minutes). Remove and set aside.

  2. Sauté the Vegetables:

    • In the same pan, add the remaining 1 tbsp olive oil.

    • Add sliced peppers and onions. Cook until softened and starting to caramelize (about 10 minutes).

    • Stir in garlic, oregano, salt, and pepper. Cook 1 more minute.

  3. Combine and Simmer:

    • Slice the browned sausages into 1-inch pieces (or leave whole if you prefer).

    • Return them to the pan with the veggies.

    • Add tomato paste and water or broth. Stir to combine.

    • Cover and simmer on low heat for about 10–15 minutes, until sausages are cooked through and flavors are combined.

  4. Serve:

    • Garnish with fresh herbs if using.

    • Serve over rice, pasta, mashed potatoes, or in toasted hoagie rolls.


🔁 Tips & Variations:

  • Spicy kick? Use hot Italian sausage or add red pepper flakes.

  • Cheesy option: Top with shredded mozzarella and broil for 2 minutes.

  • Make it ahead: Great for meal prep! Flavors improve the next day.
