🍊 Easy Orange Blender Cake
🧂 Ingredients:
-
1 whole orange, seedless (with peel if thin-skinned, like Valencia or mandarin; otherwise peel thick-skinned ones)
-
3 large eggs
-
1 cup (200 g) sugar
-
½ cup (120 ml) vegetable oil
-
1 ½ cups (180 g) all-purpose flour
-
1 tbsp baking powder
-
Pinch of salt
🧁 Optional Glaze (for shine and extra orange flavor):
-
½ cup powdered sugar
-
1–2 tbsp fresh orange juice
🔄 Instructions:
-
Prep the orange:
-
If using a thin-skinned orange, wash and quarter it — removing seeds but keeping the peel.
-
If the peel is thick or bitter, remove most of it and just use the zest and pulp.
-
-
Blend it:
-
In a blender, add the orange, eggs, sugar, and oil. Blend until smooth (about 1 minute).
-
-
Add dry ingredients:
-
Add the flour, baking powder, and salt to the blender. Pulse just until combined — don’t overmix.
-
-
Bake:
-
Pour into a greased and floured 9-inch round cake pan or loaf pan.
-
Bake at 350°F (175°C) for 35–40 minutes, or until a toothpick comes out clean.
-
-
Cool and glaze:
-
Let cool for 10–15 minutes. For a glaze, mix powdered sugar with orange juice and drizzle over the warm or cooled cake.
-
✅ Tips:
-
You can add a little vanilla or almond extract for extra flavor depth.
-
Garnish with orange zest or powdered sugar.
-
Keeps well for 2–3 days covered at room temp or can be frozen.
