Easy Mexican Taco Lasagna

Absolutely! 🎉 Mexican Taco Lasagna is a fun, crowd-pleasing twist on traditional lasagna — layers of tortillas, seasoned beef, cheese, and all the Tex-Mex goodness baked into one cheesy, bubbly dish.


🌮 Easy Mexican Taco Lasagna

🛒 Ingredients:

  • 1 lb (450 g) ground beef or ground turkey

  • 1 packet taco seasoning mix (or 2 tbsp homemade taco spice)

  • 1/2 cup water

  • 1 can (15 oz) black beans, drained and rinsed

  • 1 can (10 oz) diced tomatoes with green chiles (like Rotel), drained

  • 1 cup corn (frozen or canned & drained)

  • 8 small flour tortillas (or corn, your choice)

  • 2–3 cups shredded cheese (cheddar, Monterey Jack, or Mexican blend)

  • Optional toppings: sour cream, salsa, green onions, jalapeños, cilantro


👩‍🍳 Instructions:

1. Cook the beef:

  • In a skillet over medium heat, cook ground beef until browned.

  • Drain any excess fat.

  • Add taco seasoning and water, simmer for 2–3 minutes.

  • Stir in black beans, corn, and tomatoes. Simmer another 2–3 minutes until heated through.

2. Assemble the layers:

  • Preheat oven to 375°F (190°C).

  • In a greased 9×13″ baking dish:

    1. Layer 2 tortillas to cover the bottom (overlap as needed).

    2. Spread 1/3 of the meat mixture over tortillas.

    3. Sprinkle a layer of cheese.

    4. Repeat the layers (tortilla → meat → cheese) until all ingredients are used.

    5. Finish with a layer of tortillas and a generous final layer of cheese on top.

3. Bake:

  • Cover with foil and bake for 20 minutes.

  • Uncover and bake an additional 10 minutes, until cheese is melted and bubbly.

4. Cool and serve:

  • Let it rest 5–10 minutes before slicing (it helps it hold together).

  • Add your favorite toppings and dig in!


🔄 Variations:

  • Vegetarian: Use sautéed peppers, onions, and zucchini instead of meat.

  • Spicy: Add chopped jalapeños or hot sauce to the beef mixture.

  • Make ahead: Assemble, cover, and refrigerate for up to 24 hours before baking.
