Ingredients:
- 4 ears of corn, husked
- ¼ cup mayonnaise
- ¼ cup sour cream (or Mexican crema)
- ½ cup cotija cheese, crumbled (or feta as a substitute)
- 1 garlic clove, minced (optional)
- 1 teaspoon chili powder (or Tajín for a citrusy kick)
- 1 tablespoon lime juice (plus extra lime wedges for serving)
- 2 tablespoons chopped cilantro (optional)
- Salt to taste
Instructions:
- Grill the corn:
Preheat a grill (or grill pan) to medium-high. Grill the corn for 8–10 minutes, turning occasionally, until lightly charred all over. - Make the sauce:
