Easy Mexican Street Corn

Here’s a super easy Mexican Street Corn recipe (also known as Elote) that brings all the flavor with minimal effort — perfect for grilling season or a quick side dish.


🌽 Easy Mexican Street Corn (Elote)

Ingredients:

  • 4 ears of corn, husked
  • ¼ cup mayonnaise
  • ¼ cup sour cream (or Mexican crema)
  • ½ cup cotija cheese, crumbled (or feta as a substitute)
  • 1 garlic clove, minced (optional)
  • 1 teaspoon chili powder (or Tajín for a citrusy kick)
  • 1 tablespoon lime juice (plus extra lime wedges for serving)
  • 2 tablespoons chopped cilantro (optional)
  • Salt to taste

Instructions:

  1. Grill the corn:
    Preheat a grill (or grill pan) to medium-high. Grill the corn for 8–10 minutes, turning occasionally, until lightly charred all over.
  2. Make the sauce:
    In a bowl, mix together mayonnaise, sour cream, garlic (if using), lime juice, a pinch of salt, and half the cotija cheese.
  3. Coat the corn:
    When the corn is done, immediately brush or spoon the sauce generously over each ear.
  4. Finish with toppings:
    Sprinkle the remaining cotija cheese, chili powder or Tajín, and chopped cilantro over the top. Serve with lime wedges.

📝 Tips:

  • No grill? You can boil, roast, or pan-sear the corn instead.
  • Cotija cheese gives it an authentic flavor, but feta or parmesan work in a pinch.
  • Want it spicier? Add cayenne pepper or hot sauce to the sauce mix.
