Ingredients

For the Soup:

  • 4 large yellow onions, thinly sliced

  • 2 tbsp unsalted butter

  • 1 tbsp olive oil

  • 1 tsp sugar (helps with caramelization)

  • 2 cloves garlic, minced

  • 4 cups (1 liter) beef broth (or a mix of beef + chicken/vegetable broth)

  • ยฝ cup dry white wine (optional, or use extra broth)

  • 1 tsp fresh thyme (or ยฝ tsp dried thyme)

  • 1 bay leaf

  • Salt and black pepper to taste

For the Topping:

  • 4 slices of French baguette (1 per serving)

  • 1ยฝ cups (150g) grated Gruyรจre cheese (or Swiss/Emmental)


Instructions

๐Ÿ”ธ 1. Caramelize the Onions

  1. In a large pot or Dutch oven, heat butter and olive oil over medium heat.

  2. Add sliced onions and sugar; cook slowly, stirring often, for 25โ€“30 minutes until golden brown and soft.

  3. Add garlic and cook for 1 minute more.

  1. Add white wine to deglaze the pan (scraping up browned bits), simmer for 2 minutes.

  2. Add broth, thyme, bay leaf, salt, and pepper.

  3. Bring to a simmer, cover loosely, and cook for 15โ€“20 minutes. Discard bay leaf.

  1. While soup simmers, toast baguette slices until crisp.

  2. Optional: Rub toast with garlic for extra flavor.

  2. Top each with a toasted baguette slice and a generous amount of grated cheese.

  • No oven-safe bowls? Just toast the bread with cheese separately and float on top.

  • For a vegetarian version, use rich vegetable broth and skip the cheese or use plant-based cheese.
