🧅 Easy French Onion Soup
Ingredients (Serves 4):

4 large yellow onions, thinly sliced

3 tbsp butter

1 tbsp olive oil

1 tsp sugar (helps caramelize)

2 cloves garlic, minced
-
1/2 cup dry white wine (optional but adds depth)

4 cups beef broth (or use a mix of beef & chicken broth for lighter flavor)

1 bay leaf
-
1 tsp fresh thyme (or 1/2 tsp dried thyme)

Salt and black pepper to taste
For topping:

4 slices of French baguette

1 to 1 1/2 cups grated Gruyère cheese (or Swiss)
🍲 Instructions:

Caramelize the onions:

In a large pot, melt butter with olive oil over medium heat.

Add onions, sugar, and a pinch of salt.

Cook slowly, stirring often, for 25–30 minutes until golden and deeply caramelized.

Add garlic and wine:

Stir in garlic and cook 1 minute.

Pour in wine to deglaze the pot, scraping up browned bits. Simmer 2–3 minutes.

Simmer the soup:

Add broth, bay leaf, and thyme.

Simmer uncovered for 20 minutes. Season with salt and pepper to taste.

Remove bay leaf before serving.

Prepare the topping:

Toast baguette slices until crisp.

Ladle soup into oven-safe bowls. Top each with a toasted slice of bread and plenty of shredded cheese.

Broil to finish:

Place bowls on a baking sheet and broil for 2–3 minutes until cheese is melted and bubbly.
