Here’s a simple and cozy recipe for Easy Dumpling Soup — quick to make and perfect for a comforting meal any day of the week.

Ingredients:

  • 1 tbsp sesame oil (or any cooking oil)

  • 3 cloves garlic, minced

  • 1-inch piece fresh ginger, grated or minced

  • 1 small onion, thinly sliced

  • 6 cups chicken or vegetable broth

  • 1–2 tbsp soy sauce (to taste)

  • 1 tsp rice vinegar (optional, for brightness)

  • 1–2 cups chopped vegetables (e.g., bok choy, spinach, carrots, mushrooms)

  • 12–16 frozen dumplings or potstickers (pork, chicken, veggie, etc.)

  • 2 green onions, sliced (for garnish)

  • Red pepper flakes or chili oil (optional, for heat)


Instructions:

  1. Sauté Aromatics:

    • Heat sesame oil in a large pot over medium heat.

    • Add garlic, ginger, and onion. Sauté for 2–3 minutes until fragrant.

  2. Add Broth & Seasonings:

    • Pour in the broth, soy sauce, and rice vinegar (if using).

    • Bring to a gentle boil.

  3. Add Veggies & Dumplings:

    • Add your chosen vegetables and dumplings directly to the pot.

    • Reduce heat slightly and simmer according to the dumpling package instructions (usually 5–8 minutes), or until dumplings are cooked through and floating.

  4. Taste & Adjust:

    • Taste the broth and adjust seasoning with more soy sauce or a pinch of salt if needed.

  5. Serve:

    • Ladle into bowls, garnish with green onions and a dash of chili oil or red pepper flakes if desired.


Tips:

  • Short on time? Use pre-chopped stir-fry veggie mixes.

  • Add protein: Drop in a beaten egg (like egg drop soup) or add shredded rotisserie chicken.

  • Make it heartier: Stir in cooked ramen or rice noodles at the end.
