Easy Dumpling Soup

Ingredients:

For the Dumplings:

  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp garlic powder (optional)
  • 1/2 cup milk (or any non-dairy milk)
  • 2 tbsp butter (or olive oil for dairy-free)

For the Soup:

  • 4 cups chicken or vegetable broth (low-sodium is best)
  • 1 tbsp olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 medium carrots, peeled and sliced
  • 1 stalk celery, chopped
  • 1 cup frozen peas (or your favorite veggies)
  • 1/2 tsp dried thyme
  • Salt and pepper, to taste

Directions:

1. Make the Dumplings:

  • In a medium bowl, mix together flour, baking powder, salt, and garlic powder (if using).
  • Add the milk and melted butter (or olive oil) and stir until just combined. The dough should be thick and sticky. Set aside.

2. Prepare the Soup:

  • Heat olive oil in a large pot over medium heat.
  • Add the chopped onion and sauté for 3-4 minutes until soft and fragrant.
  • Add the minced garlic and cook for another 30 seconds.
  • Add the sliced carrots, chopped celery, and frozen peas to the pot. Stir to combine.

3. Make the Broth:

  • Pour in the broth and bring the soup to a gentle simmer.
  • Add the dried thyme, and season with salt and pepper to taste.
  • Let the soup simmer for about 10 minutes until the veggies start to soften.

4. Add the Dumplings:

  • Once the soup is simmering, spoon small amounts of the dumpling dough into the soup (about 1 tablespoon per dumpling). You should have about 8-10 dumplings.
  • Cover the pot with a lid and let the dumplings cook for 15-20 minutes. Don’t lift the lid while the dumplings are cooking—they need the steam to puff up and cook through.

5. Serve:

  • Once the dumplings are cooked, check the soup for seasoning. Adjust salt and pepper to taste.
  • Ladle the soup into bowls, making sure to get a few dumplings in each serving.

Tips:

  • Flavor Boost: Add a splash of soy sauce or lemon juice to the broth for extra depth of flavor.
  • Make it heartier: You can add cooked chicken, sausage, or beans to the soup for more protein.
