Easy No-Bake Cheesecake Recipe

Ingredients:

For the crust:
  • 1 1/2 cups graham cracker crumbs (about 10-12 crackers crushed)
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
For the filling:
  • 16 oz (2 cups) cream cheese, softened
  • 1 cup heavy whipping cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice (optional, for extra tang)
  • 1/4 cup granulated sugar
For topping (optional):
  • Fresh berries, fruit compote, or fruit preserves
  • Whipped cream

Directions:

1. Prepare the crust:

  • In a bowl, mix the graham cracker crumbs, sugar, and melted butter until the crumbs are evenly coated and the mixture sticks together.
  • Press the mixture into the bottom of a 9-inch pie dish, tart pan, or springform pan to form an even crust. Use the back of a spoon or the bottom of a glass to press it down firmly.
  • Refrigerate the crust while you make the filling, allowing it to firm up.

2. Make the filling:

  • In a mixing bowl, beat the softened cream cheese with a hand mixer or stand mixer until smooth and creamy (about 2-3 minutes).
  • In a separate bowl, whip the heavy cream, powdered sugar, and vanilla extract until soft peaks form. (Be careful not to overwhip the cream.)
  • Add the whipped cream into the cream cheese mixture, along with the lemon juice (if using), and mix gently until smooth and well combined. Taste and adjust sweetness if needed.

3. Assemble the cheesecake:

  • Pour the creamy filling into the prepared graham cracker crust, spreading it evenly with a spatula.
  • Smooth the top to make it even and beautiful.

4. Chill:

  • Cover the cheesecake with plastic wrap and refrigerate for at least 4 hours, or overnight if possible. This allows the filling to firm up and set properly.

5. Serve:

  • Before serving, top with fresh berries, fruit compote, or a dollop of whipped cream for extra sweetness and decoration.
  • Slice and enjoy!

Tips:

  • Crust options: You can use other cookies for the crust (like Oreos, Biscoff, or even Nilla wafers) for a different flavor profile.
  • Fruit toppings: Adding fresh fruit like strawberries, blueberries, or raspberries gives this dessert a refreshing touch, but you can also use fruit preserves or jams for a rich, flavorful topping.
  • Add-ins: For a bit of extra flavor, you can fold in a few tablespoons of melted chocolate, peanut butter, or caramel to the filling.
