Here’s a quick, healthy, and flavorful recipe for Easy Baked Chicken and Zucchini — perfect for weeknights when you want a light but satisfying meal with minimal cleanup!


🍗 Easy Baked Chicken and Zucchini

⏱️ Cook Time: 25–30 minutes

🔥 Oven Temp: 400°F (200°C)


🧄 Ingredients

  • 4 boneless, skinless chicken breasts or thighs

  • 2 medium zucchinis, sliced into half-moons or thick rounds

  • 1 small red onion, sliced (optional)

  • 2 tbsp olive oil

  • 1 tsp garlic powder or 2 cloves garlic, minced

  • 1 tsp Italian seasoning or dried oregano

  • Salt and pepper, to taste

  • Optional: 1/4 cup grated Parmesan, lemon wedges, fresh parsley or basil


👩‍🍳 Instructions

  1. Preheat Oven
    Preheat to 400°F (200°C). Lightly grease a baking dish or line a sheet pan with parchment paper.

  2. Prep Chicken & Veggies

    • Pat chicken dry and season with salt, pepper, half the garlic, and half the Italian seasoning.

    • In a large bowl, toss zucchini and onions with olive oil, remaining garlic and herbs, and a pinch of salt and pepper.

  3. Assemble

    • Arrange chicken breasts in the center of the baking dish or pan.

    • Surround with zucchini and onion slices.

    • Optional: Sprinkle Parmesan over everything for extra flavor.

  4. Bake
    Bake uncovered for 25–30 minutes, or until chicken is fully cooked (internal temp 165°F / 74°C) and zucchini is tender with slightly golden edges.

  5. Finish & Serve
    Squeeze fresh lemon juice over the top and sprinkle with fresh parsley or basil. Serve alone or with rice, pasta, or crusty bread.

  • Add halved cherry tomatoes or bell peppers for color and flavor.

  • Use chicken thighs for juicier results.

  • Want extra crispiness? Broil for 2–3 minutes at the end.

  • Make it creamy: Add dollops of ricotta or a splash of cream to the pan before baking.
