📝 Ingredients (Serves 4)

For the Chicken:

  • 2 large chicken breasts, halved lengthwise

  • 2 tbsp olive oil

  • 4 garlic cloves, minced

  • ½ cup grated Parmesan

  • ½ tsp smoked paprika

  • Salt & black pepper

  • Optional: ½ tsp Italian herbs

For the Alfredo Sauce (Double Parmesan):

  • 2 tbsp butter

  • 3 garlic cloves, minced

  • 1½ cups heavy cream

  • 1 cup grated Parmesan

  • ½ cup shredded Parmesan (for extra richness)

  • Salt & pepper to taste

  • Optional: pinch of nutmeg

For the Crispy Potatoes:

  • 500g baby potatoes or Yukon golds, halved

  • 2 tbsp olive oil

  • Salt, pepper, garlic powder

  • Optional: fresh rosemary or thyme

For the Creamy Truffle Mushroom Pesto:

  • 1 cup mushrooms (cremini or button), finely chopped

  • 1 garlic clove

  • ¼ cup grated Parmesan

  • 2 tbsp cream cheese or ricotta

  • 2 tbsp olive oil

  • 1–2 tsp truffle oil (adjust to taste)

  • Salt & pepper

  • Optional: a few basil leaves

🔥 1. Prepare the Crispy Potatoes:

  1. Preheat oven to 220°C (425°F).

  2. Toss potatoes with olive oil, salt, pepper, and herbs.

  3. Spread on a baking sheet and roast for 30–40 minutes, flipping halfway, until golden and crisp.

🍗 2. Cook the Chicken:

  1. Season chicken with salt, pepper, paprika, and garlic.

  2. Heat olive oil in a skillet over medium heat.

  3. Sear chicken 3–4 min per side until golden brown and nearly cooked through.

  4. Sprinkle with grated Parmesan and let it melt into a crust. Remove and set aside.
