🍤 Creamy Garlic Shrimp Pasta
📝 Ingredients:
-
8 oz pasta (linguine, spaghetti, fettuccine, or your choice)
-
1 lb large shrimp, peeled & deveined
-
4 cloves garlic, minced
-
2 tbsp olive oil
-
2 tbsp butter
-
½ cup heavy cream (or substitute with half-and-half)
-
½ cup grated Parmesan cheese
-
Zest + juice of ½ lemon
-
¼ tsp red pepper flakes (optional, for a little kick)
-
Salt & black pepper, to taste
-
Chopped parsley, for garnish
🔥 Instructions:
1. Cook Pasta:
-
Cook pasta in salted water according to package directions. Reserve ½ cup of pasta water, then drain.
2. Cook the Shrimp:
-
Season shrimp with salt and pepper.
-
In a large skillet, heat olive oil and 1 tbsp butter over medium-high heat.
-
Sear shrimp 1–2 minutes per side until pink and opaque. Remove from skillet and set aside.
3. Make the Sauce:
-
Lower heat to medium. Add remaining 1 tbsp butter and the garlic. Sauté 30 seconds to 1 minute (don’t burn it).
-
Add red pepper flakes (if using), then stir in the cream and lemon juice. Simmer for 2–3 minutes.
-
Stir in Parmesan cheese until melted and sauce thickens slightly. Add a splash of pasta water if needed to loosen it.
4. Combine:
-
Return shrimp to the skillet along with cooked pasta. Toss well to coat.
-
Add lemon zest and more Parmesan, salt, or pepper if needed.
-
Garnish with parsley and serve hot!
