  • 1 cup mushrooms, sliced (white button, cremini, or a mix of mushrooms)
  • 1/4 cup onion, thinly sliced (optional, for extra flavor)
  • 1/2 teaspoon garlic powder (or 1 clove garlic, minced)
  • Salt and pepper, to taste
  • 1/2 cup shredded cheese (cheddar, mozzarella, Swiss, or a combination)
  • 1 tablespoon fresh herbs, chopped (parsley, thyme, or rosemary, optional)

Instructions:

1. Prepare the mushrooms:

  • In a skillet, heat 1 tablespoon of olive oil over medium heat.
  • Add the sliced mushrooms and onions (if using). Sauté for 5-7 minutes, stirring occasionally, until the mushrooms are tender and browned.
  • Season with salt, pepper, and garlic powder. Continue to cook for another minute, then remove from heat and set aside.

2. Prepare the bread:

  • While the mushrooms are cooking, spread 1 tablespoon of softened butter on one side of each slice of bread. This will help create a golden, crispy exterior when grilling.

3. Assemble the sandwich:

  • Lay one slice of bread (butter side down) on a clean surface.
  • Spoon the sautéed mushrooms and onions (if using) onto the bread, spreading them evenly.
  • Sprinkle the shredded cheese over the mushrooms, followed by the fresh herbs (optional).
  • Top with the second slice of bread, butter side up.

4. Grill the sandwich:

  • Heat a large skillet or griddle over medium-low heat. Once hot, place the sandwich in the pan.
