🧂 Ingredients (4 servings):

200 g (7 oz) whole wheat spaghetti (or WW-friendly pasta)

200 g (7 oz) lean ground turkey or chicken (5% fat or less)

1 small onion, finely chopped

2 cloves garlic, minced

1 small zucchini, diced

1/2 red bell pepper, diced

200 ml (7 fl oz) crushed tomatoes (or tomato passata)

1 tbsp tomato paste

1 tsp olive oil
-
1/2 tsp dried oregano
-
1/2 tsp basil
-
Salt & pepper, to taste

Fresh parsley (optional)

Grated light Parmesan (1 tbsp per serving – optional)
🍳 Instructions:

Cook the Pasta:

Bring a pot of salted water to a boil.

Cook spaghetti according to package directions until al dente.

Drain and set aside.

Prepare the Sauce:

In a nonstick skillet, heat 1 tsp olive oil over medium heat.

Add onion and garlic, sauté until softened (2–3 minutes).

Add ground turkey/chicken, cook until browned, breaking up the meat.

Add Veggies & Simmer:

Add zucchini and bell pepper. Cook for 3–5 minutes.

Stir in tomato paste, crushed tomatoes, oregano, basil, salt, and pepper.

Simmer uncovered for 10 minutes, allowing the flavors to blend.

Combine:

Add cooked spaghetti to the sauce.

Toss well to coat evenly. Adjust seasoning.

Divide into 4 portions.
