Ingredients:

For the Cornflake Crust:
  • 4 cups cornflakes (crushed, slightly coarsely)

  • 1/4 cup sugar

  • 1/2 cup unsalted butter (melted)

For the Caramel Filling:
  • 1/2 cup unsalted butter

  • 1 cup brown sugar (packed)

  • 1/4 cup heavy cream

  • 1/4 cup light corn syrup (or golden syrup)

  • 1 tsp vanilla extract

  • Pinch of salt

For the Cream Filling:
  • 1 1/2 cups heavy cream

  • 1/4 cup powdered sugar

  • 1 tsp vanilla extract

  • 8 oz cream cheese (softened)

  • 1/4 cup powdered sugar (for sweetening cream cheese)

  • 1/2 cup whipped topping (optional, for extra fluffiness)

Optional Toppings:
  • Caramel sauce (store-bought or homemade)

  • Chopped nuts (like pecans or walnuts)

  • Additional whipped cream for garnish


Instructions:

1. Prepare the Cornflake Crust:

  • Preheat your oven to 350°F (175°C).

  • In a large bowl, crush the cornflakes coarsely (you can do this by hand or in a plastic bag with a rolling pin).

  • In a separate small bowl, combine the sugar and melted butter, then mix into the crushed cornflakes until evenly coated.

  • Press the cornflake mixture into the bottom of a 9-inch pie dish, forming a crust. Make sure it’s packed down firmly and evenly.

  • Bake the crust in the oven for 8-10 minutes, or until it turns golden brown and crispy. Once done, remove from the oven and let it cool completely.

2. Prepare the Caramel Filling:

  • In a medium saucepan, melt the butter over medium heat.

  • Add the brown sugar, heavy cream, and corn syrup to the pan. Stir continuously until the mixture is smooth and begins to simmer.

  • Let it simmer for 3-5 minutes, or until the caramel thickens slightly.

  • Remove the pan from the heat and stir in the vanilla extract and salt.

  • Pour the caramel sauce over the cooled cornflake crust. Spread it out evenly and allow it to cool to room temperature while you prepare the cream filling.

3. Prepare the Cream Filling:

  • In a medium bowl, whip the heavy cream with powdered sugar and vanilla extract until soft peaks form. Set aside.

  • In a separate bowl, beat the cream cheese and powdered sugar until smooth and creamy (you can use a hand mixer or stand mixer for this).

  • Gently fold the whipped cream into the cream cheese mixture until smooth and well combined.

  • If you want a fluffier filling, fold in whipped topping (optional).

4. Assemble the Pie:

  • Once the caramel filling has cooled and set on the crust, spread the cream filling evenly over the caramel layer.

  • Smooth the top with a spatula, and you can lightly swirl the cream filling for a decorative effect.

5. Chill the Pie:

  • Refrigerate the pie for at least 4 hours, or preferably overnight, to let the flavors meld and for the pie to set properly.

6. Garnish and Serve:

  • Before serving, drizzle some caramel sauce over the top for extra decadence.

  • You can also sprinkle chopped nuts or more crushed cornflakes on top for added texture.
